🥗 Grilled Chicken & Veggie Meal Prep
Ingredients
2 boneless chicken breasts
2 cups broccoli florets
1 cup cherry tomatoes (halved)
1 cup sweet potato cubes
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon black pepper
½ teaspoon salt
1 teaspoon sesame seeds (optional)
Instructions
Prepare the vegetables
Cut sweet potatoes into small cubes and wash broccoli florets. Slice cherry tomatoes in half.
Season the chicken
Rub chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper.
Cook the chicken
Grill or pan-cook on medium heat for 5–6 minutes per side until fully cooked. Slice into strips.
Roast the vegetables
Preheat oven to 400°F (200°C).
Spread broccoli and sweet potatoes on a baking tray.
Drizzle with olive oil and sprinkle salt and pepper.
Roast for 18–20 minutes until tender.
Assemble the meal prep
Divide broccoli, sweet potatoes, and chicken into containers. Add cherry tomatoes on top.
Garnish & store
Sprinkle sesame seeds and store in the refrigerator
